Amazing!

What a blessing this is!
I was born and raised in Pontiac. Began a job in Mississippi and got married. Been away 24 years. Became gluten intolerant 2 years ago and now my son also is. So hard to cook for a family of 5 with half gluten and half not.
My mom came for a tour and brought me down 4 sample bags of your flours.
This is my second one to try. I’m in tears! Made our family favorite chocolate cobbler which is not possible with gluten free-just doesn’t rise correctly. Used this one with adding baking powder and salt for self rising. It was delicious! And my belly is so thankful!
I’m so excited for the upcoming holidays. Can’t wait to try more family recipes with these flours.

Makes incredible pancakes!

This was my first intro to Einkorn flour, and this flour makes the best pancakes I have ever had! Well packaged, everything came with clear instructions, and I will be re-ordering from Janie’s Mill when this bag runs out. I also have gluten intolerances and while I haven’t used it enough times to say for sure, I do know that I felt fine after using the Einkorn flour on two separate occasions!

Spectacular Quality

I cook sourdough every week and my favorite recipe is to include a cup of this einkorn flour with two cups of type 80 and two cups of malted bread flours. The result is a complex rustic flavor with a velvety soft crumb. I’ve tried other suppliers but Janie's is simply the best

Have used sparingly, mixed with other Janie's Mill Artisan blend and Whole wheat flours, adding an additional dimension to sourdough.
Just getting started with varying ratios to develop the illusive 'perfect sourdough loaf', when along the way they are all 'pretty darn good breads' with the foundation of high quality sourcing and milling. The level of care in grain processing is apparent in each loaf.
