I am very pleased with the sifted artisan flour for baking sourdough bread. Very flavorful. I also bought the High Protein flour and Emmer but haven't used them yet.
I've used this twice for Pain au Leaving - Great extensibility and feel. I'm definitely going to move to this for my bread flour. Just another great flower to add to my repertoire from Janie's Mill!
This is my favorite flour from Janie’s Mill!
The protein content of this flour is slightly lower than what I'd normally use for a high hydration sourdough bread, so I had to adjust my recipe a bit, but the end result was fantastic. The crumb of lean sourdough breads seemed lighter, while the crust had more crunch to it. The flavor was also much more pronounced in both lean and enriched breads. Janie's MIll flours all seem to produce a more-complex sourdough flavor than more processed flours (like KA bread flour), but this sifted artisan flour was even richer in flavor. It produced a slightly tangy and nutty-sweet loaf that's delicious for sandwiches, french toast, or simply toasted and buttered (my favorite).
Loved the rise with this flour! I made a quick b=ead and it was was very good and soft crumb. This flour is fresh not like the store flour sitting in warehouses for who knows how long. I definitely will order more!
