    Each ear of this richly-flavored heirloom variety of organic corn variety contains a mix of golden yellow, coppery red, and deep orange kernels. You’ll see flecks of those multi-hued seed coats against the golden background of this medium-coarse grind. It makes a delicious and hearty pot of polenta or grits, but can also be used in cornbread and other baked goods, especially if you soak it ahead of time to soften the “grittiness.”

    The name of this variety derives from the Ojibwe (Chippewa) name for Iowa’s Wapsipinicon River. The “valley” part of the name refers to the valley-like indentation at the top of each kernel.

    According to the Steinbronn family of Artesian Organic Farm, Wapsie Valley Dent Open-Pollinated Corn came into being in 1971 when Adolph Steinbronn crossed Reid’s Yellow Dent and Golden Glow varieties. The corn is still being grown by the 1st, 2nd, and 3rd generations of Adolph Steinbronn in Bremer County, Iowa where it originated.
