This flour is so delicious in a sourdough boule or batard. I love all the breads I have baked with it. I wish I lived closer to your farm so I could only buy your flours. My fridge is currently stocked with lots of Janie’s Mill flour, which I purchased as a birthday gift. I highly recommend these delicious and healthy-tasting flours.
The aromas that turkey red gives off is incredible. The flour has a strong cinnamon smell that turns into more of a honey scent after it's been fermented. I've never had bread anywhere that tasted like this, it's so delicious. It doesn't have a super strong wheaty taste to it either. The flavor is very mild and pleasant, tasting a lot like the way it smells.
I love the fact that Turkey Red is an heirloom wheat & therefore not messed with by the plant breeders, as the modern wheat varieties are.

I’ve been using this flour combined with high protein to make some delicious sourdough. Also tasty in quick breads. Bought a 25 lb bag that I store in the freezer, no regrets for buying so much!
