Bread Making Returns to Its Roots
The first bread was made around 8,000 BC with whole grains ground into flour with various stone implements. Eventually mill stones were made, and they efficiently crushed whole kernels into whole wheat flour. Only after the steel roller mill was invented in 1834 did white flour become available. But this bright new technology came with a dark side. It stripped grains of the nutrient-dense bran and germ, resulting in baked goods without vitamins, minerals, and healthy oils. Because of the loss of nutrients, white roller-milled flour had to be “enriched” with additives. Today many bakers recognize that stone-milled, whole-kernel flours produce more delicious baked goods that have more nutritional value. For these and many other reasons, they choose freshly stone-milled, organic flours from Janie’s Mill that are pure and wholesome, with no chemical additives or preservatives.
