Our organic rye berries are popular for milling, malting, distilling, and using in grain bowls. To prepare the whole grain, simply measure out the desired amount of rye berries into a saucepan and add three to four times as much water and salt to taste. Bring to a boil, reduce heat, cover, and simmer for about an hour or until tender. Drain and set aside to cool, or serve immediately in a breakfast bowl, dinner grain bowl, or salad. Try this rye berry salad, and feel free to substitute whatever herbs, nuts, or fruits you have on hand.

This rye has an unusual flavor profile compared to most other ryes I've baked with. I typically use it for sourdough hearth loaves at 20% and even at this relatively low quantity it adds clear notes of raisiny sweetness and cinnamony spice. After the first loaf I thought some spices had gotten mixed in by accident but the flavor is consistently reproducible. I've thus pivoted to using it more for pastries, where these qualities truly shine!
