    We stone-mill this whole-kernel flour from organic Black Emmer, a rare ancient grain also known as Farro Nero. The word “farro” comes from pharaoh, as this grain was originally grown in ancient Egypt. When the Roman Empire expanded there, they brought this grain back to the continent, and it became known as farro nero, the “black grain of the Pharaohs.”

    Black Emmer is an extremely versatile flour, good in yeast or sourdough breads, as well as in cookies, pancakes, zucchini bread and other quick breads. At 11% protein, you can use Black Emmer Flour instead of All-Purpose in your favorite recipes, and bake something truly extraordinary — delicious and highly nutritious!

Perfect loaves

Addictive nutty flavor, superior performance in either yeast or sourdough breads. I add the Black Emmer to the High-Protein bread flour for lighter loaves. I did learn that one should mix a yeast bread as a sourdough when using Black Emmer, otherwise you get fire resistant masonary bricks. Lesson learned. All my loaves have been perfect since. Open even crumb, great rise, crispy crust and moist inside.

First Time working with Black Emmer flour

This was my first attempt using Black Emmer flour. I loved the smooth texture of the flour. My loaf turned out beautiful and full of flavor, but pretty heavy. I'm giving myself grace to try different recipes and not get discouraged. I think mixing Black Emmer with an all-purpose flour may help. I'll take suggestions. So excited to try it again.
