I just made my first loaves of desem breads this past weekend, each started and made with one of the red heirloom flours (Red Fife and Red Turkey). The Red Turkey desem starter is slower to develop but when scored before baking the loaf, it rapidly expanded and baked into a deliciously full-flavored loaf. The flavors of Red Turkey are strong and distinctive, but very pleasant! I'm already looking forward to making my next loaf of bread with this great tasting flour!

Used this flour to make cookies. My wife loved them. I am sure glad I decided to buy flour from Janie's mill instead of the store bought flour. love the recipes that are on the site may look at buying a cookbook or two in the future.
I use this in breads and cookies with great success. My family loves the taste when I make banana bread or muffins with it. Earthy and wholesome!
