I thought I would try this to add in my sourdough recipe. I found a buckwheat sourdough recipe and have used it for bread 2 times so far. Today I made a great tasting loaf that had high protein bread flour, buckwheat and some black emmer. Just delicious!
My wife has always liked buckwheat flour, especially pancakes. Up until I tried Janie's buckwheat flour I was never a real fan. I can't believe how getting a quality product can make such a difference. I now really enjoy when my Dear makes delicious buckwheat pancakes. The taste is clean and smooth. Others can leave a grainy consistency on the palate, but not this flour. Terrific in every way!
I love buckwheat flour, and this is the best I've ever tried. Makes unbelievable pancakes. Extremely fresh and tasty, very earthy. Nothing in the stores compares to this flour.

I've been using the buckwheat for almost a year now. First as an AP replacer for a coffee cake. Then straight sandwich bread. The last few weeks, I've been fermenting the buckwheat with liquid levain, as a starter for an artisan rye loaf. The loamy earthiness of the buckwheat balances the "spice" of your dark rye for a deeply satisfying, filling, and not over sour naturally levained bread. I'll be buying another 3 pounds in not to long.
