Unfortunately I haven't had the chance to use this flour. I'm hoping to be able to make a sourdough starter, but I haven't had the time, since it's pretty involved. I will come back and update this review after I use it! Hopefully that will be soon!

Delicious Surprise

This was my first time working with einkorn. There was a bit of a learning curve as the lower gluten content produced a stickier dough. However, the result was worth the effort! The flavor is amazing and my whole family has been gobbling up the loaves and the tortillas I made. I was honestly surprised as my kids often prefer more of an all purpose or bread flour product. But they have been raving about this einkorn flour! Thank you, Janie’s for helping me fill my kids’ bellies with delicious and nutritious food! :)

Replaced our 50/50 all-purpose/whole wheat blend

Until we learned about the advantages of flours like the ones Janie's Mill sells, we had been using a 50/50 mix of (both store-bought) all-purpose and whole wheat flours. We enjoyed the slight nuttiness from the whole wheat, and the blend kept it from being too strong of a "healthy taste." The einkorn is an excellent upgrade - healthier, tastes better, and 100% whole wheat.
