    This naturally light-colored cake and pastry flour has a low gluten level and mild flavor. Frederick White wheat does not contain the strong-flavored phenolic compounds that give red wheat its color, so baked goods made with it require less sugar or other sweeteners. Janie's Mill organic Frederick White Cake Flour is very versatile —good for cakes, of course, but also quick breads, cookies, pastries, biscuits, and crackers. In the South, White Lily flour is very popular, and what I USED to use. But about 18 months ago I started milling my own flour and have been very happy with the wheat I've gotten from Janie's Mill. This past month, I decided to try the Frederick Cake Flour, and oh my goodness - I made my grandchildren's favorite chocolate cake with it, and it was wonderful! I'm not sure if anyone would be able to tell the difference between the White Lily and the Frederick Cake Flour - it was that good!

light, moist cake

I make a spice cake for friends and family every Christmas. I usually use store bought all purpose flour. This year I experimented with Janie's Mill flour. I started with all purpose, and the cake was good, but a bit dense. Then I switched in 1 cup Fredrick cake flour and 1 cup all purpose and it was the best cake ever. It was light, moist with a good crumb. I don't know the science behind this success, but I am loving this flour! I used it for some muffins I make with a mix of flour and almond meal (to add protein) and the texture rocks. Thank you!

Fantastic organic cake flour

I am so happy to find organic artisan flours here at Janie’s Mill. The shipping dept deserves compliments for its fast and safe shipping too. I would love to post a picture of the delicious and beautiful birthday cake (made with organic Fredrick cake flour)that was promptly demolished. All three layers were perfectly scrumptious. Yay for finding Janie’s Mill!
