In the South, White Lily flour is very popular, and what I USED to use. But about 18 months ago I started milling my own flour and have been very happy with the wheat I've gotten from Janie's Mill. This past month, I decided to try the Frederick Cake Flour, and oh my goodness - I made my grandchildren's favorite chocolate cake with it, and it was wonderful! I'm not sure if anyone would be able to tell the difference between the White Lily and the Frederick Cake Flour - it was that good!

light, moist cake

I make a spice cake for friends and family every Christmas. I usually use store bought all purpose flour. This year I experimented with Janie's Mill flour. I started with all purpose, and the cake was good, but a bit dense. Then I switched in 1 cup Fredrick cake flour and 1 cup all purpose and it was the best cake ever. It was light, moist with a good crumb. I don't know the science behind this success, but I am loving this flour! I used it for some muffins I make with a mix of flour and almond meal (to add protein) and the texture rocks. Thank you!
