I use this flour for focaccia, works out perfect using a slightly higher hydration. We really enjoy it.

Amazing flour for sourdough

Flour arrived quickly and as described. I switched from King Arthur bread flour to the high protein wheat flour with great success. I combine it with 25-30% AP flour with good results. My family loves the sourdough bread. I will continue to purchase from this company.

I enjoy working with this flour

I turned to this flour from King Arthur's organic bread flour. The costs are about the same but the extra shipping costs make this flour a "boutique" flour for me. But I figured I'm only baking for myself and my husband so a special treat of this High Protein flour is OK. To stretch it I use 25% Costco AP flour which has a bit more protein than most AP flours and 25% High Protein flour. For the remaining 50% I go wild and experiment, sometimes Spelt, sometimes Rye but always Turkey Red is in the mix. I like that the bread turns out a bit darker than when I use commercial flour. Makes me think I'm eating "peasant" bread, the real deal. Yeah!
