Made a total of 6 simple sourdough 8 oz loaves with the 4 flours in this sampler, plus Artisan and Black Emmer. My mom, husband, and I tried each of them and all 3 of us gave Turkey Red the highest marks for taste and texture, but the other 5 came close. Turkey Red was the easiest to work with and had great rise. I also really liked the Spelt. I’ve made spelt bread before with flour from another company, but it was not nearly as good as that made with Janie’s Mill. For flavor alone, the Black Emmer was wonderful! I would use it to make rolls to eat with stew or hearty soup. I plan to try out some enriched breads next.
I am just so pleased with Janiesmill. I ordered some many different flours and these ancient heirloom grwins are fabulous. Working with them is a dream, not to mention how good it feels knowing that you are making healthy food for your family. Not only do I love the grain, the packaging is the Best! I am your lifetime customer now . These flours are better than any other flours. Tasty and healthy. I prepare indian flatbread(chapati), donuts, pancakes Delicious! My family loves them.
Used the Spelt to make Zucchini bread. A nice new texture that was very good, AND flavorful!
