    Red Fife is an heirloom wheat with a high protein level (15.4%) and deeper, more complex flavors than common hard red winter wheats. If you mill your own flour, you’ll love the robust, slightly sweet and spicy taste of freshly milled organic Red Fife. Or you can boil the whole berries and use them in pilafs, soups, breakfast bowls, and grain salads.

    Red Fife’s origin is unknown, but it is believed that Mennonite farmers in Poland grew the wheat that was shipped to David Fife, a Scottish immigrant in Canada, in the mid-1800s. Fife then grew the wheat and shared it with other farmers, calling it Red Fife because of its distinctive color. Red Fife set the baking and milling standards from the 1860s to the turn of the 20th century, and has been placed on the Slow Food Foundation for Biodiversity’s “Ark of Taste. It is thought to be a relative of Halychanka, a Ukrainian Heritage wheat, prized for its rich flavors and excellent baking qualities.

High protein blend

I am now milling Red Fife and Glenn, about 80% extraction, as the high protein component of my levain hearth loaves. Allows me to get the flavors from low protein Warthog (whole) using the structure of the high proteins. I find Fife more flavorful than Glenn.

Great wheat from a great company!

I had used red fife wheat before but recently ran out and bought organic red winter wheat berries from elsewhere. What a mistake! Red fife wheat has a much better taste and texture than standard hard red wheat. When I discovered that Janies mill had red fife in stock and at a great price I was thrilled and bought 75lbs. My order showed up at my door incredibly quickly and was so carefully and thoughtfully packed that it may as well have been gift wrapped! Absolutely thrilled with both the wheat berries and the incredible people at Janies Mill!

Organic Red Fife wheat, not just for eating!

For several years now, I’ve planted this wheat from Janie’s Farm as a winter wheat cover crop. The depth and density of the roots are amazing and therefor excellent for soil building (and carbon sequestration.) It was gorgeous when it ripened, golden and tall. The birds ate the grain, and I used the straw in my trying-to-be biodynamic garden in northern Illinois.
