    Red Fife is an heirloom wheat with a high protein level and deeper, more complex flavors than common hard red winter wheats. If you mill your own flour, you’ll love the robust, slightly sweet and spicy taste of freshly milled organic Red Fife. Or you can boil the whole berries and use them in pilafs, soups, breakfast bowls, and grain salads.

    Red Fife’s origin is unknown, but it is believed that Mennonite farmers in Poland grew the wheat that was shipped to David Fife, a Scottish immigrant in Canada, in the mid-1800s. Fife then grew the wheat and shared it with other farmers, calling it Red Fife because of its distinctive color. Red Fife set the baking and milling standards from the 1860s to the turn of the 20th century, and has been placed on the Slow Food Foundation for Biodiversity’s “Ark of Taste. It is thought to be a relative of Halychanka, a Ukrainian Heritage wheat, prized for its rich flavors and excellent baking qualities.

Love Red Fife

I had never tried red fife before and didn’t know if I would like it and I went by the reviews on the website. Well, I love red fife and will continue to buy it! If you are on the fence, buy it, and buy the same size I bought, 25 lbs, even though I hadn’t tried it! So glad I bought that size. Did I mention that I love RED FIFE?

Best whole grain bread flour!

Red fife is a very different bread wheat. I grind my own flour and bake bread every week, and Red fife flour kneads in half the time of other whole wheat bread flours I have used. It also rises well and has more oven spring than I am used to. The texture of the bread is also fine and not crumbly. This is the best whole grain bread flour I have used, and the taste surpasses them all. Thank you for growing this wonderful variety!

When you love wheat

I have so many favorites. However, I have never been keen with the red wheats. The taste is just to strong. I decided to give these a try because they are a much older variety. These berries actually shocked me with the flavor. Not harsh or bitter at all. I only bought a small bag to try and came back and got the 25 pound bag! It's a keeper for us.
