    Red Fife is an heirloom wheat with a high protein level (15.4%) and deeper, more complex flavors than common hard red winter wheats. If you mill your own flour, you’ll love the robust, slightly sweet and spicy taste of freshly milled organic Red Fife. Or you can boil the whole berries and use them in pilafs, soups, breakfast bowls, and grain salads.

    Red Fife’s origin is unknown, but it is believed that Mennonite farmers in Poland grew the wheat that was shipped to David Fife, a Scottish immigrant in Canada, in the mid-1800s. Fife then grew the wheat and shared it with other farmers, calling it Red Fife because of its distinctive color. Red Fife set the baking and milling standards from the 1860s to the turn of the 20th century, and has been placed on the Slow Food Foundation for Biodiversity’s “Ark of Taste. It is thought to be a relative of Halychanka, a Ukrainian Heritage wheat, prized for its rich flavors and excellent baking qualities.

Love the taste!

I was introduced to Red Fife wheat just a few weeks ago and I’m hooked!! I have mixed it with hard white and hard red wheat to make bread and LOVE the results! Great flavor and texture!

Love the Red Fife

I made a sourdough bread with this wheat. It was excellent. My sourdough started is all fresh ground rye. Janie's Mill does a great job with packaging. Looking forward to trying the black Emmer next.

Love Janie's Mill but Red Fife is my least favorite for sourdough

Red Fife tastes great, don't get me wrong, but it makes for a very slack dough so it's not very easy to work with. It does much better combined with another more elastic flour like Warthog.

Excellent HRW wheat flour

I just received 25# of Red Fife wheat berries along with a lidded plastic bucket which I also purchased from Janie's. I have had time for only two bakes of sourdough bread but it was excellent (for me) and was the best I have done so far. The order arrived promptly (a surprise as I live on the west coast) and in good condition. The berries were of excellent quality and ground into a very fresh smelling flour. I am using a discontinued model of Magic Mill III electric and currently use the flour un-bolted. I have just ordered a #40 and #60 sieve and will try some brioche recipes after they arrive. Couldn't be happier with the order, the website information, and the final product.

Excellent Customer service!

To follow up with my last review, I was contacted by Jill Brockman-Cummings, Mill Manager, and she was wonderful in making sure I was completely satisfied with my order….problems happen, but nothing matches great customer service. This company is the best, and I will always use them for my wheat/grain orders in the future. Great selection of grains, fast service/delivery and Excellent customer service and attention. I cannot recommend this wonderful company highly enough!
