It would probably be good for an eggy pasta, and was fantastic in fried mediterranean flat bread. However, I bought it for pasta and it was too coarse in a simple fetuccini.
The smoothness of this semolina has made it perfect for pasta. Gnochi and egg noodles are so much better with some semolina in the mix. It has been great for pizza dough and as way to keep the bottom of the pizza crisp.
Made homemade rigatoni with this wonderful flour. Amazing taste and pasta holds up to my thick meat sauce.
I actually use this as an addition to my bread making and it turns out fantastic!
