I use this flour regularly to make whole wheat sourdough, mixing it with about 1/3rd of the red fife. It makes a delicious, hardy and complex bread with a moist crumb. My whole family loves it.
Janie's Mill Whole Kernel Bread Flour makes a bread with an excellent crumb and a nice nutty flavor. I like the term "Whole Kernel" because that is what's in the bag. However, some bakers may not catch that "whole kernel" is the "whole" of the wheat. So whatever you call it- this is a terrific bread flour.
I bought the wrong flour...I didn't realize that this was whole wheat. Great whole wheat flour...not what I wanted.

I contemplated making a sourdough from this, but I though "let me try just a simple whole wheat bread first". Wow! This is the most wheat flavor I have tasted in a bread. I don't think I will bother with the sourdough. As long as Janie's Mill keeps making this, I will keep buying it. Thanks.
