    Heirloom Turkey Red Wheat has excellent flavor, and good protein quantity and quality. It was grown in the breadbaskets of Europe for centuries, prized for its hardiness, rich flavors, and excellent baking qualities. Turkey Red Wheat first came to the Great Plains with Mennonite immigrants from Crimea and the Ukraine in 1873, and has been recognized by Slow Food and put on their Ark of Taste. Bread bakers love to blend our organic Turkey Red Flour with High Protein bread flour for a richer taste. Turkey Red may also be substituted for All-Purpose flour in cookies, muffins, crackers, and quick breads.

    NEW LOT: As of January 2025, we are using a new lot of Turkey Red Wheat. This wheat has a protein level of 9.6%, which is lower than the previous lot, but the falling number remains good, at 415. Even though the protein is of high quality, the lower quantity means that it's best to combine with our High-Protein or Whole-Kernel Bread Flour for airy sourdough and yeast breads. You may also use it as a substitute for All-Purpose Flour in many baked goods from quick breads, to biscuits, to cookies.

Great flour for tender crumb

I baked our favorite chocolate chip cookies as well as a peach loaf bread using Turkey Red flour. I gave one of the loaves as a gift and the recipients were delighted and reported that it was gone in a few hours!!! I am not surprised. Janie's Mill flours are wonderful!

Fabulous Flavor

This flour has a great flavor and makes great cookies, pancakes and breads. I always try to keep a good supply of this flour at all times.

Wow! Phenomenal Taste!

I finally opened the bag of Turkey Red I bought two months ago. I made a 100% whole wheat sourdough sandwich loaf with it. The loaf is for my son’s girlfriend, but after I sliced it, I toasted a skinny slice to try. The taste is ridiculously delicious. I’ll be making a loaf for myself soon. Love this flour. High quality flour with exceptional flavor. I think I’ve found my “go-to” whole wheat flour. Love it!
