  • Product Info

Janie's Mill organic Light Rye Flour has some of the bran sifted out to give the flour a silky smooth texture and light color. But our stone-milling process means that the flour retains the sweet and earthy flavors of the whole rye kernel. Our Light Rye is a very versatile flour, and really shines in biscuits, pancakes, cookies, and brownies. And of course it’s great in breads! Try substituting rye flour for some or all of your usual flour, and taste the difference!

Eye for the Rye

I loved this light rye for it flavor and oven spring. I did blend it with the high protein flour for a more open crumb since rye can be a more closed crumb and it produced wonderful with great oven spring

Rye Bread, sweet like grandma used to make

So my grandma used to make this gram rye flour rye bread when I as a tot. we made this together all the time. she lived with us till she passed. I have to say we tried and tried to make this bread but never found the right ingredients, well one day I happened upon this flour web site, and tried it, and now we have the recipe and the flour to make it. it was spot on and wonderful. can't wait to make another batch. I bought my second bag about a month ago, and its in the freezer waiting for me to get the time to make it. its the best flour so far by far. Its just the best for bread. try it you'll love it.

Light Rye Bread

I used this flour (light rye) to bake a family recipe that has been in our family for generations. The bread turned out delicious and this flour made all the difference!

brownies

I use this flour (Light Rye) in two ways, for the most part. My rye porridge sourdough boule, which also uses Janie's Mill cracked rye, is a regular at the farmer's market. Also a winner is my all-rye brownies recipe. The rye flour gives a great fudgy texture and the flavor deepens the chocolate experience.

my favorite rye flour

This is my go-to rye flour for most applications. Bear in mind that some millers would label this flour a "medium rye"
