    Red Fife is an heirloom wheat with a high protein level (15.4%) and deeper, more complex flavors than common hard red winter wheats. If you mill your own flour, you’ll love the robust, slightly sweet and spicy taste of freshly milled organic Red Fife. Or you can boil the whole berries and use them in pilafs, soups, breakfast bowls, and grain salads.

    Red Fife’s origin is unknown, but it is believed that Mennonite farmers in Poland grew the wheat that was shipped to David Fife, a Scottish immigrant in Canada, in the mid-1800s. Fife then grew the wheat and shared it with other farmers, calling it Red Fife because of its distinctive color. Red Fife set the baking and milling standards from the 1860s to the turn of the 20th century, and has been placed on the Slow Food Foundation for Biodiversity’s “Ark of Taste. It is thought to be a relative of Halychanka, a Ukrainian Heritage wheat, prized for its rich flavors and excellent baking qualities.

It is good to know that I am baking with an excellent organic product. The berries came in excellent time.

Lovely berries

I do a 50/50 blend of these and hard white berries for bread and these give off the slightest hint of cinnamon(in a good way). When we make toast it smells like fresh cinnamon bread being baked and even our neighbor asked if I added cinnamon. I said no just the berries I recently changed. It's just the scent, you can't really taste it.

Yummy breads

As the great chef once said, "The secret is to start with the best, highest quality ingredients, and then try not to mess it up." Everyone who has tried my breads has said how much better they are now. I've not told them that I'm using a new grain, but I guess now I have to. This is a true old-world wheat that works really well for my breads. So glad I found Janie's Mill!
