Awesomely smooth

This is the one I like the most its smooth like cake flour and healthier too. best for cakes, cookies, muffins and more. so far my very favorite.

Simply the best

After making sourdough bread for the past couple years and making some bad loaves but many more great loaves (thanks to Janie’s artisan bread flour), I have now ventured into a new hobby of making pies. I have to say, this pastry flour yields the best pie crust I have ever made, what a difference! I love that Janie conveniently sends it on schedule so I never run out. Thank you!

Greatest flour

My children won't eat whole wheat because it looks dark I made muffins with the flour and it tasted delicious and looked great

Delicious!

I love this flour, and prefer to use it over anything else for quick breads, scones, cookies, etc. It transforms any of these recipes into culinary concoctions that taste like that they are from a bakery. I have not had luck using it with sourdough or other baking, as it seems to not soak up liquid like most other flour. I'm sure that is something I could play around with and figure out, but with 4 young ones under foot and an 8 year old learning her way in the kitchen, I prefer to use it just for what the package recommends.

Perfect for shortbread and cookies

This flour certainly does what it says on the tin: makes pastries with silky smooth texture. I've used it for shortbread and chocolate chip cookies so far, and they came out so light and tender-crisp. The cookies had the perfect brown, flaky/crispy edges and exterior, with a chewy center (the way I like 'em). I just love how light the end product was compared to my usual 11.7% AP flour. My AP flour cookies are good, but they end up with a harder crunch rather than the fine, flaky crispness of this lovely pastry flour. And the flavor this flour (like all Janie's Mill flours) simply can't be beat. Love it.
