    Heirloom Turkey Red Wheat has excellent flavor, and good protein quantity and quality. It was grown in the breadbaskets of Europe for centuries, prized for its hardiness, rich flavors, and excellent baking qualities. Turkey Red Wheat first came to the Great Plains with Mennonite immigrants from Crimea and the Ukraine in 1873, and has been recognized by Slow Food and put on their Ark of Taste. Bread bakers love to blend our organic Turkey Red Flour with High Protein bread flour for a richer taste. Turkey Red may also be substituted for All-Purpose flour in cookies, muffins, crackers, and quick breads.

Turkey Red flour

Earthy, nutty flavor. Stronger taste than the Red Fife. Love them both.

Strong Whole Wheat Flavor

I ordered this, Red Fife, and Warthog. This was my least favorite of the three as it tasted the most of the slightly bitter flavor I think most people associate with whole wheat due to higher tannin and phenol content of the red wheat usually used. I'm sensitive to bitter flavors, so I loved Warthog, which has an earthy but not bitter flavor. If you're looking for the classic whole wheat flavor, though, Turkey Red is the one to get.

Great flour, easy to use

I am using a combination of flours (emmer, red fife and turkey red) with a sourdough hydration recipe (https://breadtopia.com/no-knead-whole-wheat-sourdough-hydration-comparison/) in my home oven turned into a steam oven, at 375 degrees, and am happy with the result (https://www.theperfectloaf.com/baking-with-steam-in-your-home-oven/). I still have alot to learn, but am very thankful to have found your flours. The taste is incredible and the dough smells heavenly.
