    Red Star® Active Dry Bakers Yeast provides a moderate, steady leavening rate to develop more flavor in all types of yeast doughs from no or low sugar to highly sweetened and enriched. The somewhat slower action of active dry yeast (compared to Instant Yeast) makes it the perfect choice for slow fermentation and refrigerated doughs.

    Active Dry Yeast may be substituted 1:1 for Instant Yeast, but because it has a slower rate of action, your dough may take slightly longer to rise. Simply monitor your dough while it is rising and adjust the time as needed.

    This yeast is designed for use in regular yeast breads, enriched breads, rolls, pizza, sandwich bread, bagels, and more. The vacuum-packed, one-pound (454g) brick will make about 100 loaves. It will keep for years when stored in an air-tight container in the freezer.

Pay attention to the ingredients in the Yeast that You choose...

While I do use Red Star Yeast, I avoid the RED Star Active Dry Yeast the product that contains or adds the ingredient sorbitan monostearate, another name for this ingredient is polysorbate 60... an ingredient that is made from genetically modified corn or potatoes... potatoes fall under the dirty dozen (a crop that is highly sprayed with pesticides), so choosing organic potatoes is always wise, to avoid the pesticide residues...

Red Star Yeast rises to the occasion

I only use Red Star Yeast from Janie's Mill in all my baking. My breads and rolls are always delicious, so I know the Red Star is the best

'Go to' yeast

I've used Red Star for as long as I've been baking and have never had an issue with it. There are other good yeasts out there, King Arthur SAF among them, but Red Star is almost universally available and, here, at a very reasonable price.
