An Interesting Read

I purchased this book out of curiosity more than anything and am glad that I did. The authors went to great length to write the "backstory" about heritage foods that shape America's culinary identity. The book is organized by regions of the United States. The authors discuss the unique foods that are encountered in the waters, farms, orchards and gardens of these regions. The authors provide a description of the foods, flavors and uses of the foods, along with its history. Numerous exemplary recipes are presented to showcase these foods. Several examples of grains of interest to bakers are included in the book. I found the book to be an interesting and easy read.
