Admittedly, I am new to the world of bread baking and truly never realized that there is anything but grocery-shelf flour. Wow, what a difference small, family-owned, freshly-milled artisan flour makes! Janie's delivers an absolutely quality product that I am thrilled to bake with and to gift my creations to friends. The only downside is that I seem to run out too fast (haha). I did sign up for the monthly delivery so I should be set. Thank you Janie's!
I've been using this blend for a while and it really is one of my favorites. It rises well and works very well in my usual recipes e.g. using a cast iron pot for a hard crusted round loaf, or a sandwich bread baked in an Emile Henri covered loaf pan. Both have a great flavor, and I like that the flours are organic. For comparison, I sometimes use about a 60-40 mix of Bronze Chief from Montana, and Bluebird flour from southern Colorado (preferred by many Native Americans). These 2 flours, however, are not organic. I guess I'm not as experienced at baking, but I don't find there to be anything difficult about working with the Artisan Blend, and I always love the results.
This whole wheat flour is amazing and very tasty with earthy notes that we all love in a sourdough wheat bread. Yes, it is difficult to work with it as it is with every whole wheat flour, but worth working with it. Just love it! ❤️
It's whole wheat. Does not react like normal artisan flour. Recipes need to be adjusted for whole wheat. I feel all the information is misleading. It's wording is that you think you are getting this amazing flour, but in reality you are just getting whole wheat flour. Disappointed for sure but it's still a good flour if you cut it with actual bread flour or all purpose.
This flour produces a great loaf with earthy flavors. Highly recommend!
