Bakers at our house have used artisan blend organic bread flour for a no knead bread and a seeded bread baked in a cast iron Dutch oven. Both turned out great :)
This is the first flour I’ve tried from Janie’s. It affords a really interesting and unique flavor to bread. It’s immediately noticeable in the smell of the crust as it bakes and then the bread itself has a wonderful midwestern flavor, with notes of corn (which surprised me in a very good way). It gives a hearty dark gold look to the inside of the loaf.

I’ve been baking and writing about bread for years. This is excellent flour for a range of loaves. Great flavor too for sourdoughs.
Went to Jaine’s after my old flour company had inconsistent availability. Went from using a 50/50 bread flour to whole wheat mix to just using this flour for my sourdough and the results were better than expected. I have a new source for flour.
