    Durum is an ancient wheat that is a close relative of Emmer. It is the “hardest” of the hard red spring wheats, and has a very high protein level (17.8%) and great flavor, whether you mill it into flour, or use our organic whole berries in grain bowls or breakfast bowls.

Lovely pasta!

I milled Janie’s durum wheat berries into a beautiful, fragrant flour and made a batch of noodles. Absolutely delicious and a pleasing soft yellow color. The pasta is delicately flavored and not at all “whole wheat” tasting even though I used it straight from the mill without sifting any of the good stuff out. This could become a delicious habit! I’m looking forward to playing with coarser/finer grinds to see if I can improve on perfection!
