    The term “white flour” is often used to mean “refined flour,” so “white whole wheat flour” sounds like a contradiction in terms . . . but it’s not! We stone-mill this flour from the WHOLE wheat berry of the WHITE wheat we grow, a variety called Frederick. This means you get a light color, but 100% of the nutrition found in the whole kernel.

    Our organic Frederick White wheat does not contain the strong-flavored phenolic compounds that give red wheat its color, so baked goods made with white wheat require less sugar or other sweeteners. This flour is very versatile—good in yeast breads (often combined with High Protein or Sifted Artisan flours), quick breads, cookies, pastries, biscuits, and crackers.

Elevate your cookies to the max!!!

I can’t say enough good things about Janie’s Mill Frederick White Wheat Flour! I use it exclusively in my sourdough chocolate chip cookies, and it has completely transformed them. The texture it gives is absolutely perfect—well structured, caramelized and crunchy on the outside yet soft and tender on the inside and the flavor is truly unmatched. There’s a subtle richness and depth that you just don’t get from standard flours.

My favorite all purpose flour

Three times I have purchased 2 - 25 lb bags of flour. (Regular and Bread Flour) Each time I tried different kinds. Although I did try the All Purpose flour, I like Fredericks as a whiter all purpose flour for pies cookies biscuits etc. Also it is mild and doesn't add extra flavor to my baked goods. This is the second time I purchase it and will again. Of course I am so thankful to be able to buy Glyphosate-free flour!

Love the idea, need to change the way bread is made.

I have been using "white whole wheat" exclusively for several years. When I used this flour in my normal WWW recipe, volumetric measurement of the flour was way off. I needed to add another whole cup to reach the desired texture. This flour should be caveated to be measured by weight, not volume, because it is highly milled and very light.
