Obsessed, I actually use this as a sub for any recipe that calls for bread flour! Makes perfect cinnamon rolls!
I used the "pizza flour" with my spelt sourdough starter that I made. The pizza crust was EXCELLENT tasting. The next pizza that I make will be sheet pan Grandmother Pizza.
This is the first time I've ever used 00 flour in making pizza dough and I'm a convert. I used 50% JMAP and 50% JM00 and had the best results ever. An hour of counter proofing and 4 hours of refrigerated rest made it easy to handle and it baked up beautifully even with substantial toppings.
I've tried a variety of flour. This is absolutely the best out there.
