    Red Fife has deeper, more complex flavors than common hard red winter wheats, and breads made with it bake up moister, with a cohesive crumb. Because Red Fife has high gluten potential, it can be used by itself or mixed with low gluten flours such as rye.

    Red Fife wheat’s origin is unknown, but it is believed that Mennonite farmers in Poland grew the wheat that was shipped to David Fife, a Scottish immigrant in Canada, in the mid-1800s. Fife then grew the wheat and shared it with other farmers, calling it Red Fife because of its distinctive color. Red Fife set the baking and milling standards from the 1860s to the turn of the 20th century, and has been placed on the Slow Food Foundation for Biodiversity’s “Ark of Taste. It is thought to be a relative of Halychanka, a Ukrainian Heritage wheat, prized for its rich flavors and excellent baking qualities.

Love this flour!

I bought the red fife because I like to experiment with different flours. This flour gave the bread amazing flavor. Everyone who has tried it has commented on how good it tastes. My daughter loved it so much she started doing sourdough and is using it in her breads. Thank you Janie’s Mills.

Great Product, yummy taste

I am using a combination of flours (emmer, red fife and turkey red) with a sourdough hydration recipe (https://breadtopia.com/no-knead-whole-wheat-sourdough-hydration-comparison/) in my home oven turned into a steam oven, at 375 degrees, and am happy with the result (https://www.theperfectloaf.com/baking-with-steam-in-your-home-oven/). I still have alot to learn, but am very thankful to have found your flours. The taste is incredible and the dough smells heavenly.

This is another flour that I have waited to try. I am not disappointed. Again this was used along with King Arthur’s Organic bread flour and 100 grams Red Fife. Ref Fife was used instead of the Organic wheat flour I had. This also resulted in great flavor and color. This will
