    Spelt is an ancient grain that was domesticated around 5,000BC. It has never been hybridized for high yields, and so has retained its wholesome nutrient profile. It is particularly rich in important minerals such as zinc, iron, phosphorus, copper, and magnesium.

Southern Spelt Biscuits

Love this spelt flour for flavorful southern-style biscuits. The low gluten is perfect for biscuits. I eat them with a little (real) maple syrup because gravy masks the rich spelt flavor. Also good for sourdough pancakes. Those are great with butter and honey.

Perfect Pancakes

I always use my great grandma's pancake recipe, and substituting spelt makes truly Perfect Pancakes (and probably closer to how hers tasted)! For my Pullman loaf bread, subbing in a third to a half of spelt instead of all-purpose makes a great sandwich bread. Thanks Janie's for all your wonderful products!
