Black Emmer has a mild, slightly sweet taste with none of the bitterness of modern wheat. I have only baked one loaf, using half Black Emmer and half all-purpose flour. It had a good texture and a nice rise despite its reputation for "poor" gluten quality. I has used it in muffins which turned out to have a nice flavor and rose nicely too.
Very elegant and intelligent grain, no wonder its known as "the black grain of the pharaohs"! It brings life and character to whatever we've used it in, we are really impressed by the versatility of this good grain and how fantastic it is for our bellies. 100% satisfied.
I really like Emmer berries (or their flour), I do grind my own. Baked goods come out delicious and I am very happy with this product. Highly recommend.
These berries are what I expected, fresh and tasty. I've prepared them as farro with sauteed apples and yogurt.
I've also made a pudding with them.
