The cracked wheat, also known as raw bulgur, has all the flavor, fiber, and nutrition of the whole wheat berries, but provides greater versatility in your kitchen. Cracked Wheat: freshly milled and flavorful!

I purchased 25# of organic cracked wheat. It's fresh, whole-grain, and tastes deliciously sweet. One cup of cracked wheat to three cups water takes 15 min of simmering to cook. Add a bit of maple syrup, a few sunflower and pumpkin seeds, and it keeps one full of energy for hours.

Please note, however: unlike bulgur, this cracked wheat is totally unprocessed, so is not the same as the processed bulgur/cracked wheat that is commonly sold in stores. It can be used in place of bulgar, but the flavor and texture will be different.

Great for breakfast, w/steel cut oats

I first started mixing (50/50) steel cut oats and cracked wheat for hot breakfast in college days, a long time ago. I still eat this a couple of mornings every week. It requires maybe 10-15 minutes to boil and a little attention to prevent over-cooking, but the result is great with a splash of cream and sugar stirred in.

Improving on a childhood memory

When I was a kid, I loved Ralston’s hot cereal; I did an online search, but results are suspicious and expensive. Since I know my childhood favorite was cracked wheat, I decided to try Janie’s Mill bulgur wheat and the online recipe. It was better than what I tried to duplicate. Although not as coarse as I’m used to using for my tabbouleh, it’s still delicious there, too. What a wonderful update to an old memory!
