I wanted to give this a try to add to my sourdough recipe . I was happy with the results. This will be added to my flour rotation.
Really appreciate the sturdy packaging that all of the flours come in so they arrive in excellent condition. The durum wheat has a rich yellow hue which reflects the wonderful lutein content. Very healthy and fresh! The texture is soft and makes delicious pasta and sandwich wraps. Many thanks to the farmers and the people at the mill for making this delightful organic flour available.
SPLENDIDO !! is what my pal used to say when he savored an especially tasty dish. I can imagine him saying this if he had tasted my wife's recent lasagne, with noodles made from 100% Janie's Mill Durham Flour. These strips of pasta showed mighty structural integrity, golden color, and pure, deep wheat flavor. Just what lasagne wants to be!
I used half Duram Wheat and half Artisan Blend Flours. Nice flavor, crumb and coloring.
