SPLENDIDO !! is what my pal used to say when he savored an especially tasty dish. I can imagine him saying this if he had tasted my wife's recent lasagne, with noodles made from 100% Janie's Mill Durham Flour. These strips of pasta showed mighty structural integrity, golden color, and pure, deep wheat flavor. Just what lasagne wants to be!
I used half Duram Wheat and half Artisan Blend Flours. Nice flavor, crumb and coloring.
I’ve only ordered once before as I’m one person who just loves making sourdough bread. I have to give over half of it away as I’m a single person but can’t stop baking! Took awhile to go through all the flour I’d ordered and I needed more. I’d never ‘ordered’ flour before so I wisely chose Janie’s mill. All the flours I’ve ordered have been fantastic and the service is second to none! I used from the previous order red fife, artisan blend, turkey red, and maybe another one or two. All produced excellent products unless there was a ‘user error’. This time I ordered Einkorn, high protein, Italian style, artisan blend and Durham. It’s recommended that it be stored in the freezer where it will keep for quite a while, so I order a lot. Since I just received my current order I’ve only used the Durham mixed with regular bread flour, half of each. Two large beautiful boules resulted with a great reddish color and the flavor is wonderful..my lucky friends and neighbors agree! This is definitely a mill to order from!
The taste and texture of a sourdough boule made from durham was excellent. This flour needs a lot of water!
