Artisan Sifted - Amazing

I have been in the search for the perfect flour for sourdough bread. If you could see my pantry, bags of flour everywhere. The artisan sifted is now the base for my bread. I usually mix in 20% of fresh ground spelt, rye or kamut to this flour. Love the crumb, crust, rise and oven spring. Thanks Janie’s!

I really like this flour! It is light and silky fine. I made a couple sourdough boules with it, mixed 70% and 30% Black Emmer and they rose very nicely, with lots of lovely bubbles throughout. The protein content helps the dough hold up really well with a cool overnight bulk fermentation, then a few more hours of proofing in the baskets before baking. Most important of all, they were delicious! I'll buy this again for sure!
