We stone grind and then finely sift a special blend of hard red spring wheat and hard red winter wheat to make this very versatile flour. The fine sifting produces a soft, pillowy texture that's perfect for the crackling crust and open crumb of baguettes, boules, and other traditional artisan breads. This is also the best Janie's Mill flour to use if you have a bread machine.

Excellent flour

I got this flour in a sampler pack and liked it so much that I ordered a larger quantity. It makes beautiful sourdough bread and the flavor is outstanding. Highly recommend.
