A flavorful airy crumb with extra crunchy crust

The protein content of this flour is slightly lower than what I'd normally use for a high hydration sourdough bread, so I had to adjust my recipe a bit, but the end result was fantastic. The crumb of lean sourdough breads seemed lighter, while the crust had more crunch to it. The flavor was also much more pronounced in both lean and enriched breads. Janie's MIll flours all seem to produce a more-complex sourdough flavor than more processed flours (like KA bread flour), but this sifted artisan flour was even richer in flavor. It produced a slightly tangy and nutty-sweet loaf that's delicious for sandwiches, french toast, or simply toasted and buttered (my favorite).

Great flour

Loved the rise with this flour! I made a quick b=ead and it was was very good and soft crumb. This flour is fresh not like the store flour sitting in warehouses for who knows how long. I definitely will order more!

A great go-to for light airy loaves!

I love using Sifted Artisan in so many things! It makes great French loaves and wonderful rolls. I've also used it in combo with other flours for sourdough boules. I even had to throw it in once to a cookie recipe and it worked well! Super versatile.

I didn't use yet.I hope that this one, is the best.I tried in the past all purpose flour from you & I was so dissapointed.That's why I didn't try it yet.
