I can eat this!

I haven't been able to eat wheat for 20+ years without severe issues. I'm not celiac, but always have an immune system reaction. After lots of research, I found this pastry wheat flour with the lowest protein I could find and decided to try it. I made buttermilk biscuits and had only some mild issues the first time. Two days later I had a biscuit and no issue with digestion. AND, it's cheaper than my gluten free flour! 😅😊 It's a major win for me. Thank you Janie's Mill!! Your flour has changed my world and allowed me to have some more freedom with my baking. ❤️❤️

Wonderful quality

I used the soft and silky flour for a banana bread recipe to compare it with the all purpose flour. It was very good! I did mix half silky and half all purpose and it was my favorite! Delicious experiments. I brought some to work and a customer ordered some flour online after she ate a piece! Love the quality and education the staff provides!

Not suited for angel food cake

I admit that it was my fault not to have read about your flours thoroughly before I placed my order (that's why I am giving 4 stars). I did not realize that this flour has some germ and bran finely ground into it until I baked an angel food cake, my go-to recipe to test a new pasty flour. The flour seemed so smooth and soft but the cake didn't rise as it should. That's when I read more on your web site and realized that this pastry flour contains some oil from germ. I do use sprouted whole grain, which I grind just before use with my grain mill, but prefer my pastry flour without any germ or bran to make delicate cakes and cookies. Once whole grain is ground, the oil from the germ becomes rancid in 10 days. I am keeping the rest of the flour in my freezer, and I am sure it will make excellent cakes and cookies. I just believe that not every flour has to contain germ and bran in order to be "healthy". I do admire your farming practices and philosophy and send my best wishes to continuing success.

Ok, so this is my second review! I just LOVE this flour for my pie crusts! You haven't ordered this yet? Why not?! This flour absolutely elevates your pie. I can even tell when I'm handling the dough to roll it out how light it is. You can feel the difference. Once you try this flour, you will not want to use anything else for your pastries!
