    We grow our organic Warthog wheat berries on Janie's Farm, just down the road from Janie's Mill. This variety of hard red winter wheat has a moderate protein level and outstanding flavor. It's popular among home millers because it makes a delicious and high-performing all-purpose flour. The berries are also great when cooked up and used in grain bowls, soups, stews, and pilafs.

This has become my go to grain to mill all purpose flour. I and the family have come to cherish Warthog's depth of flavor and the earthy notes and all our tarts, pies, cookies, focaccias and crackers are now baked with only freshly bolted Warthog flour.

Absolutely wonderful red winter!

Baked this as 33% freshly milled in the sourdough. The loaf is golden brown, smells wonderful, very different from other whole wheats I've used before, very earthy and almost "grassy" (in a good way). Sweeter side of wheat on the palate, less sour than others of the same inclusions of 33% and the same fermentation Great flavor, absolutely no bitterness, loved this bread! Lingering wonderful after taste that is hard to describe - very pleasing, creamy almost. Nice chew (soft), but definitely a nice hearty chew!

Not Bitter At All! Yay!

I love this wheat!!! I am sensitive to bitter flavors so generally prefer white to red wheat, but Warthog is earthy and flavorful without being bitter. My new favorite, and good in everything from scones to sourdough! Red Fife is lovely, too, but I prefer Warthog.
