    Our organic Sifted Durum adds a warm, rich flavor and aroma to your sweet and savory baked goods. This finely milled flour is sometimes called "extra fancy durum flour" or "semolina rimacinata" (twice-milled semolina). It's perfect for yeast and sourdough breads, as well as for finer-textured pasta, and rustic cookies or cakes. We mill this flour from Durum, an ancient grain closely related to Emmer. It's very high in protein, but has lower gluten potential than our High-Protein Flour.

    Sifted Durum is very versatile, and you can substitute it for about 30% of the bread flour you normally use in yeast or sourdough breads. It also adds a rich taste and golden color to cakes, cookies, biscuits, quick breads and more. Here are some great recipes we developed especially for our Sifted Durum:

Can’t wait!

I’m so excited to get this Durham wheat! I ordered 2, 25 pound bags. I love baking bread but haven’t had a chance to use it yet with thanksgiving and birthdays and I am still canning. I order a new pasta machine so as soon as it arrives I will be making fresh pasta! Everything I have ordered from Janie’s has been amazing so I am sure this will be as well! BEST PIZZA CRUST AND LOAF OF BREAD!!!

I mixed a 3lb. bag of High Protein Flour with 1.4lb. of Sifted Duram Flour. Then I made a basic sweet dough recipe and made the most delicious pizza crust I have ever made and tasted! With the other half of that dough, I made a regular loaf of bread! Best texture of bread EVER! Simply AMAZING RESULTS and WORTH EVERY SINGLE PENNY! I was lucky enough to purchase a 25lb. bag on sale of the Sifted Durum flour and a Baker's Package of Flour! I also ordered a package of that MARVELOUS YEAST! The recommendation of keeping your yeast in the freezer is simply the smartest way to keep yeast for a long, long time! I was so pleased with the results of my first purchase from Janie's Mill that I just made a second purchase and will soon be ready for baking wonderful breads and cookies for Christmas Gift Baskets! One thing I can say with 100% confidence is "I Could Taste The Difference in my Bread Products"! Well . . . I've got another 100 pounds of flour coming . . . JANIE'S MILL ROCKS!!!!! God Bless!!! P.S. Best pizza in a while

First use after using store bought 00 and ‘semolina’. Needed to add water to about 80%. This Durum is amazing with 50/50 all purpose and a tad of Glen. I wanted a place where shipping to NJ didn’t break the bank. Looking forward to Janie’s continued quality grains. So glad I found this Mill.
