    Our organic Sifted Durum is a finely milled flour that is sometimes called "extra fancy durum flour" or "semolina rimacinata" (twice-milled semolina). It's perfect for fine-textured, airy baked goods, as well as for finer-textured pasta. This flour is milled from Durum, an ancient grain closely related to Emmer, and is very high in protein (16.1%).
