Our organic Sifted Durum will add a warm, rich flavor and aroma to your sweet and savory baked goods. This finely milled flour is sometimes called "extra fancy durum flour" or "semolina rimacinata" (twice-milled semolina). It's perfect for yeast and sourdough breads, as well as for finer-textured pasta, and rustic cookies or cakes. We mill this flour from Durum, an ancient grain closely related to Emmer. It's very high in protein (16.1%), but has lower gluten potential than our High-Protein Flour.
You can substitute Sifted Durum for Italian-Style Pizza Flour or your favorite bread flour in most recipes. Here are some great recipes we developed especially for our Sifted Durum:
